apostrophe from data definition changed to symbol after formatted

I've had this problem before where in Cascade Server the apostrophe from a text area field previewed correctly but when the page was published, the apostrophe showed up as a symbol. I can change the encoding to ASCII but wondered if there was any downside to doing that.

    Hi Karen,

    This generally occurs due to an encoding issue somewhere. I would recommend confirming the following:

    • You Cascade database uses the utf8_unicode_ci collation and utf8 character set. Note: this is for MySQL, but would be similar for other vendors
    • Your published page contains a UTF-8 charset <meta> tag
    • Your web server is serving the files as UTF-8
