update data definition
when changing the design of the site, is there a way to migrate existing content to a different data definition without using web services (risky on a production system) or a manual copy/paste (laborious)?

What exactly are you changing? This may work if you use the same identifiers in your new data definition.

Unfortunately, the identifiers are not the same (actually, one is and
the other isn't).

Gotcha. My guess is that the element with the same identifier will be mapped automatically. For the other one,you will need to either perform a manual copy/paste or create a web services script which will take care of the mapping (as you mentioned above).
